Change all references from SaintCoinach to appropriate replacements

Isn't SaintCoinach deprecated at this point? Should the documentation be updated to reflect that and point at one of the newer tools instead?

In addition, should we link to the more user-friendly EXDViewer instead of or in addition to linking to the csv, e.g. https://exd.camora.dev/sheet/LogMessage#R10667 for my comment below? I believe that since EXDViewer links are to the RowID and not a line, they should be valid from patch to patch.

XIVData Oxidizer is a spiritual replacement for SaintCoinach, though it does not cover all of the same features. Some references may be able to be replaced with references to EXDViewer or XIVAPI links. All XIVAPI references in the repository should also be converted over to v2 links.
