Add the Interests collection and "I want to run this as SaaS" form on project detail pages.

Tasks

• Create Interests Payload collection (name, email, project, type, message, budget, timeline, createdAt)
• Build form UI on project detail page
• Form submission handler
• Admin notification on submission
• Thank you page with next steps

Acceptance Criteria

• Form creates Interest record linked to correct project
• Admin sees submissions with project context
• Confirmation shown after submission
