Improve logging

There's lots of logging that is not useful and in inconsistent formats. Like lots of audio packets and health checks spamming the logs which is unhelpful.

We want to use emojis or [tags] to represent different areas such as recognition, transcription, diarisation, memory etc.

We also would like to be able to track individual conversations and audio chunks through the logs. We use complex UUID's, I wonder if there's a library than generates more reconisable tokens like whatthreewords?

this improvbement will likely pay off in time in the future. AI may be able to do a lot very quiuckly

This has been improved a lot in prior months. I think we can create a new issue if issue persists.
