Update vitepress and vite

There is a harmless error when running the local dev server and when the user clicks on a page with a table, see the airnode heartbeat page. My hope is that a newer version of Vite might fix this.

There is talk of this issue with react as well: facebook/react#5652

There is a renovate PR for Vitepress v1.5. I will do this in the near future
