Move to ESM

For some elements on what is needed in order to move the backend to ESM: #1116

The following package can not be updated unless we move to ESM:

• [DEPENCENCIES] pdf-text-reader@v5 requires ESM and node@22 #1149
• [DEPENDENCIES] mime@v4 package requires the use of ESM #1148
• If we want to use file-type we need to be in ESM Remove mmmagic and replace with file-type #1218
• [DEPENDENCIES] node-fetch@v3 is now ESM only #1251
• chore(deps): update getmeili/meilisearch docker tag to v1.19 #1668 Meilisearch client v0.50 is detected as ESM package
