@rnx-kit/align-deps profile for 0.81 doesn't handle metro serializer incompatibility

What happened?

There is an incompatibility when bundling against RN 0.81 if the metro version goes beyond 0.83.1. This causes bundling errors (baseJsBundle undefined). The align-deps profile for 0.81 has the metro versions set as ^0.83.1, which allows package managers to move to unsupported versions.
