enhance .gitattributes with consistency rules

As a Developer, I want to make sure when I do not introduce unnecessary noise when I push to the repositories. 

- add eol=lf for our scripts, json and yml files
- follow [recommandations ](https://docs.github.com/en/get-started/git-basics/configuring-git-to-handle-line-endings)
