Documentation: provide examples for "25.2 The logging level"

Please could you reword the logging section a bit? It took some time to understand that there are two items that can be configured:

## xmlresolver.properties
default-logger-log-level=off|info|warning|error
catalog-logging =request:warning|error,response:warning|error,config:warning|error

if I am correct....

The documentation is a mess. This may partly be a consequence of the implementation being a bit of a mess in this area. I'm tempted to just rip it all out and leave that for the logger to handle. Too big a change?
