Between tags https://github.com/0xPolygon/cdk-validium-node/tree/v0.0.2 and https://github.com/0xPolygon/cdk-validium-node/tree/v0.0.3, a naming regression has occurred, reverting the docker tag and folder name back to zkevm-node when they should be cdk-validium-node.

This PR:

Fixes the docker tag name (zkevm-node -> cdk-validium-node)
Updates the binary and /app folder names to cdk-validium-node
Removes excess whitespace and adds a trailing newline to the docker-compose.yml file
