This allows the user to provision a persistent volume for the pvc created by the postgres chart

I might be missing something. How does the postgres subchart know to use this PV?

Pvc bind themselves to an available pv with capacity and the correct type of storage for them. At least to the extent of my knowledge
Let me see if I can force the pv to be bound to the specific pvc
