This pull request contains the fixes for cmake in mac os as well as a small polish of the cent os script in order for the code to be the same with the Ubuntu scripts.

I'd strongly favor a solution that involves providing new binaries for ParaView on Ubuntu and MacOS, ideally ParaView 5.13 or higher. It is very likely that this would solve the problem and we could then support Cmake > 4.x

Thanks for the input, @TobiasDuswald — I completely agree that providing updated binaries for ParaView (ideally 5.13 or newer) on Ubuntu and macOS would be the right long-term solution, especially as it would allow us to fully support CMake > 4.x.

In the meantime, using a specific CMake version serves as a temporary workaround to keep things functional until we’re ready to update the binaries.

Additionally, @johnpapad24, it seems that the issues related to the CMake version are still persisting on MacOS.
