Drop direct references from dependencies and expand tests to Python 3.11

This pull request includes minor updates to the CI configuration, project metadata, and versioning. The most important changes are summarized below.

CI configuration update:

• Added Python 3.11 to the test matrix in .github/workflows/ci.yml, expanding compatibility and test coverage.

Project metadata cleanup:

• Removed the [tool.hatch.metadata] section from pyproject.toml, disabling direct references which was holding us back from registering on conda.

Version bump:

• Updated __version__ in sectionate/version.py from 0.3.2 to 0.3.3 to reflect the new release.
