Updates the example project to fix a few issues:

  • Updates Gradle to 9.2.1, which now allows for people with their JAVA_HOME set to Java 25 to execute Gradle commands.
  • Updates the Paper reference in gradle.properties to point to the latest Paper 1.21.11 commit.
  • Adds apiVersion to gradle.properties
  • Updates the patch files to apply correctly for 1.21.11.
  • Bumps the paperweight.paptcher plugin to 2.0.0-beta.19 and foojay-resolver-convention to 1.0.0.
