Fluidsynth sampler plugins have a dep on fluidsynth2, but this is not available in debian bookworm.
This adds the older bullseye repo to apt and pulls in fluidsynth2, allowing fluidsynth-based plugins to work (until they are eventually rebuilt against fluidsynth3).
