Updated coverage report badge to use Codecov.

I think this is ready to go and it needs to be on main before it will start reporting the coverage. The badge is rendering now at least (https://github.com/ColmTalbot/bilby/blob/add-codecov-coverage/README.rst) |

Attempting to address #924. I took the implementation from another package I maintain. The settings might be a little outdated.
