Fix: Run PHPUnit against latest version

I am a little confused (as usual) but, why does not this repo. not have default branch like main or master? There are both, but they are 3y old and not in use. The reason I ask is currently the release and branch have the same numbering and locking the workflow to a specific version prevent PHPUnit from picking up breaking changes.

As now PHPUnit on HEAD is broken and it should have been picked up by workflow:
